Scorzonera

Scorzonera was cultivated as a vegetable from the 17th century onwards. It took the place of purple salsify which had been cultivated up until then. Also known as “winter asparagus”, it has lost popularity recently, most likely due to its time-intensive culinary preparation.

    Radish root is some 25-35 cm long, skin smooth and black. In order to prevent split roots, ensure that the soil has been worked deeply enough.
